Default Draining Provent Catch Can

The drain tube running from the bottom of my catch can has a red tap at the bottom which I assume I turn 90 degrees to release built up oil. However, it's quite stiff and I don't want to force it. Should I just apply the muscle? I notice that there is a metal fitting at the bottom which I might need to unscrew.

Yes it is a bit tight. Hold the tap-tube connection and turn.

the tap that came with my provent leaks so i'll have to see about one of these if it's better.

I just used a cheap irrigation tap from Bunnings.

So far the oil has not degraded the plastic at all.

Just looks like a simple ball valve, they can have various seal materials so depending on quality as to whether you get a leak or not. I fitted one to my home made catch can many years ago, still works well, you won't break it there may or may not be a stop, just turn it with a bit of force while looking in the end.
