Well I did my usual trick with trying to follow recipes and went off the beaten track. o_O

Instead of using cream, I used Greek yoghurt and threw in all of the chicken and veggies from Friday night. Well fork me, talk about bloody tasty! :eek:

Like I said, the JO recipe is a base, do what you like with it, they all turn out great.

I often make a 3 mushroom risotto (portobello, swiss brown & dried porcini).

Always saute the non dry mushrooms first to till golden (because saute mushrooms with a nice golden colour = more flavour than colourless mushrooms), don't over crowd the pan or they will stew and turn to mush instead.

Sometimes I will throw in some dried shiitake as well and make it a 4 shroom risotto.

Home made chicken stock of course.

Some cream, shallots, (decent) wine, butter, garlic, parmesan and bob's ya aunty.

Once made I can't stop eating it.

mmmmmmmm.

I made a prawn dip and curried prawns n rice for lunch yesterday. Prawns , creamed cheese, sweet chilli sauce and Greek yoghurt for the dip and just a simple onion, crushed garlic, peas, corn Aldi curry sauce and tin of coconut cream for the curried prawns. Now having some toast with the dip used instead of butter and the curried prawns on top. Friggin great combo and has gone down a treat. 🤤

Bring a plate I'm told.

So I took 3 of my favourite BBQ sides.

Guacamole tater tots, in lieu of my usual deluxe potato salad.

Baby pea, mint and bacon salad.

Mexican corn deviled eggs.

What's all that muck says his heathen meat and potatoes extended family.

Shut up and try them I say.

Just made a chookin pie and put into the oven. Used 10 Aldi chookin BBQ kebabs with some mushrooms, sundried tomato, onion, garlic and two cheeses. 😁

Guacamole tater tots

Makes 48

I made this for a lot of people, so halve to make 24 etc.

Ingredients.

Guacamole

2 ripe avocados

1/4 teaspoon salt

1 lime, plus zest

1 red onion, chopped finely

2-4 tablespoons minced red onion or thinly sliced green onion

1-2 jalapeno) chilies, stems and seeds removed, minced

1/2 cup coriander leaves, 2 tablespoons of stems, finely chop the leaves, pestle and mortar stems with lime zest, chilli, 1/2 onion, garlic and salt

Pinch freshly ground black pepper

1/2 ripe tomato, squeeze out juice and seeds and finely chop

Tots:

1kg potatoes, peeled and cut into large pieces

6 Tbsp snipped fresh chives

2 Tbsp flour

2 tsp seasoned salt

1 tsp pepper

Coating:

1/2 cup flour

2 eggs, well beaten

2 cups panko breadcrumbs

Olive oil cooking spray, or canola but olive is better.

Make guacamole

Deseed and skin avocados. Remove the pit. Place in a bowl and mash. Don't overdo it! The guacamole should be a little chunky.

Pestle and mortar stems with lime zest, chilli, half the onion, garlic and salt and pound into paste, add to bowl of avocadoes.

Finally chop up remaining onion and coriander.

Chop up tomato, get hand full and squeeze out excess juice, add to bowl of other ingredients and mix all thoroughly.

Squeeze in lime juice to taste.

Make Tots

Place potatoes in a medium pot of boiling water. Cook for 10 minutes or until tender when pierced with a knife, but not cooked all the way through. Drain and let cool slightly.

Coarsely grate potatoes into a large bowl. Stir in chives, flour and seasonings with a fork. Add guacamole and combine.

Place flour, egg and panko breadcrumbs in separate small bowls next to each other.

Preheat oven to 240 c and line a large baking sheet with foil or parchment paper, then coat with cooking spray. Using wet or lightly floured hands, divide potato mixture into 48 equal mounds.

shape into small oval pieces, like a football.

Roll each into flour to coat completely and tap off excess. Roll in egg, then roll in breadcrumbs, pressing lightly to coat as heavily as possible.

Place on prepared baking sheet and coat liberally with cooking spray. Bake for 20 to 25 minutes coating with spray twice during baking. Tots should be nicely browned and very crisp.

Season with additional salt, if desired.

CREAMY BACON MINT PEA SALAD

THE INGREDIENTS

Dressing

1/2 cup sour cream

1/3 cup mayonnaise

1 tablespoon granulated sugar

1 tablespoon apple cider vinegar

1/2 teaspoon salt

1/2 teaspoon black pepper

Handful of mint very finely chopped.

Salad

5 cups frozen sweet peas thawed

12 strips bacon cooked until crisp then finely chopped or crumbled

1/2 cup shredded parmesan cheese

1/2 a medium red finely chopped

INSTRUCTIONS

Thaw peas.

In a small mixing bowl, whisk together the salad dressing ingredients. Cover and refrigerate while you move on to the next steps.

In a large mixing bowl, combine the peas, cooked and crumbled bacon, shredded cheese, mint and diced red onion.

Pour the salad dressing over the salad in ingredients in the large bowl; toss well. Cover and chill in the refrigerator for 2-3 hours before serving.

Mexican Corn Deviled Eggs

Ingredients

12 eggs

1/4 cup mayonnaise

1 1/2 tablespoons Dijon mustard

2 teaspoons Worcestershire sauce

Dash of Tabasco sauce, more if you like spicy

1/2 cup feta cheese crumbled

salt & pepper to taste

1/4 cup minced red onion for garnish

1/2 cup grilled corn (approximately one ear), and it must be grilled sweet corn…

chilli powder to garnish

2 tablespoons chopped coriander for garnish

In a large pot, add eggs and cover with water 2" above eggs. Bring to a boil over high heat.

When water reaches a boil, cover pot and remove from heat. Allow to sit for 10 minutes.

Place pot in sink and add cold water until water in pot is completely cool to stop cooking process.

Peel each egg and slice in half lengthwise and remove yolks to medium bowl.

With a fork, mash yolks until smooth. Add mayonnaise, mustard, Worcestershire sauce, Tabasco sauce and fetta cheese. Stir together until smooth and well combined. Add salt and pepper to taste.

Add yolk mixture to sandwich storage bag and seal. Snip off one corner of bag to act as piping bag and fill the cavity of each egg white with yolk mixture.

Garnish each egg with red onion, corn, chilli powder and coriander. If you don't want very spicy substitute chilli powder for paprika.

After 15km walk this morning, time for breakfast.

Guacamole, smoked salmon and poached eggs on toast.

About 3 bucks at Casa Mi, 28 bucks at the latte sucking, lycra wearing, pushbike riding fat bastards trendy hangout down the road.

Winning. 🤟
