If you don’t have an engine already, I’d start with having a chat with Hartley Engineering. There is a port injection version of the VK56 that was used in Y62 in the GCC countries and in the Titan in the US. I believe they mainly use this version as opposed to the direct injection version that all AUS delivered Y62s have. It’s a much easier engine to control and is apparently relatively cheap out of the US. Doesn’t have quite the same power output, but probably not an issue for a GU/GQ conversion.
